Internal cooking temperatures for pork:
For pork roasts and chops, we recommend cooking to an internal temperature of 145°F (63°C) followed by a 3-minute rest time.
For ground pork, we recommend cooking to an internal temperature of 160°F (71°C).
For slow-cooked pork dishes like pulled pork, the internal temperature should reach at least 190°F (88°C) to ensure that the meat is fully cooked and tender.
For pork sausages, we recommend cooking to an internal temperature of 160°F (71°C).
