Preheat your oven to 425°F (218°C).
Place the marrow bones in a baking dish or cast iron skillet.
Season the bones with salt and black pepper.
Add any fresh herbs you like, such as rosemary or thyme.
Roast the bones in the oven for 15-20 minutes or until the marrow is soft and golden brown on top.
Remove the bones from the oven and let them cool for a few minutes.
Serve the marrow bones hot with slices of baguette or toast for spreading the marrow on.
You can also add garlic or shallots to the baking dish for extra flavor.
If you prefer a richer flavor, you can soak the bones in cold water for several hours before roasting them. This will help to remove any blood or impurities from the bones.
Be careful when removing the bones from the oven, as they will be very hot!!
