
Roasted pork chops with aromatic sauce
These large bone-in chops, sourced from organic, rural pigs, are absolutely amazing, fragrant and very tasty. The ideal preparation guarantees the perfect balance between crispy skin, juicy meat and rich vegetable sauce.
Preparing cutlets

Preheat the oven and prepare the vegetable base:
Preheat the oven to 220°C. Place larger pieces of carrot in the baking dish; you can also add celery, half an onion, garlic or any other vegetables you have on hand. -
Roasting the chops:
Salt the chops. In a hot pan with a little oil, brown the meat on both sides, including the skin, until it gets a beautiful color. Then transfer the browned chops to a baking dish with chopped vegetables. -
Baking in the oven:
Pour a small amount of water or white wine into the baking dish – the meat should not be completely submerged, however. Place the baking dish in an oven preheated to 200°C. After 10 minutes, turn the chops and after another 10 minutes, reduce the temperature to 150°C. Bake for another 50–60 minutes (or 10–15 minutes longer at 140°C). -
Finishing and seasoning:
If you have fresh herbs (such as rosemary or thyme) available, you can add them to the roasting pan along with the halved apples – they go great with the flavour of the roast meat. Check the chops occasionally during roasting to see if they need to be basted and make sure the meat doesn’t “sit” in water.
Preparing a simple sauce
For a delicious sauce, it is advisable to choose ingredients such as carrots, apples and cider. Alternatively, you can use other vegetables - parsley, onion, carrots, leeks, thyme or rosemary, or white wine or cider.
- After baking, excess fat should be removed from the baking dish.
- Simply heat the remaining mixture of vegetables and juices briefly and stir.
- For a thicker sauce, it is not necessary to add flour, but it can be added to taste.
Side dish: Parsnips with maple syrup
Also try an interesting side dish that will perfectly complement the baked chops.
- Cut the parsnip into thicker, oblong pieces (approx. 500 g).
- Add 2 tablespoons of oil, 3 tablespoons of maple syrup, and a little fresh thyme.
- Place in a preheated oven at 200°C and bake for 40 minutes.
