The Real Meat Society
Paul started out as a butcher, opening a shop in Staffordshire and becoming the first English butcher in London's Chinatown. He then worked as a chef at Mezzo, Nobu and Namm (both Michelin starred). After successes in London (e.g. Khew), he moved to Prague where he founded Sansho and Maso a kobliha, both Michelin Bib awarded.

In 2011, he founded The Real Meat Society. He challenged local prejudices by opening a store with exclusively Czech meat from grazing animals of exceptional quality, which was considered an impossible task. At TRMS, we were pioneers of the dry-aging and organic meat industry in the Czech Republic, as well as the local production movement. Our current effort is to bring organic meat to a wider audience and make it accessible to the widest possible circle of people.

The meat you find here is only organic or from small free-range farms. This is our guarantee that the animals were treated fairly and with respect on the farm. You will feel the difference in taste and quality after the first bite.
